Time & Temperature

If food is kept in the temperature danger zone for longer than four hours it must be discarded. This includes the time when the food is removed from the delivery truck until it is stored, prepped and cooked.

Tips for keeping temperature sensitive food safe:

  • Schedule deliveries for off-peak hours and make sure enough trained staff are available to receive, inspect, and store food promptly.
  • Label alll items with the delivery date or a use-by date.
  • Make sure thermometers are properly calibrated before checking the temperature of received food items.

Your business can be damaged if food is improperly handled, regardless of whether you, or someone else mishandled it before receiving it.
